Super simple winter warming cauliflower soup!

I love cauliflowers. Did you know they are really good for you too? They are naturally high in B-vitamins, as well as antioxidants and phytonutrients that can protect against cancer. They also contain fibre to enhance weight loss and digestion, and choline that is essential for learning and memory, and have many other health boosting properties too, which you can read more about here

I happened to have a half a cauliflower left in the fridge, so thought I would make some soup with it! I just added a bit of this and a bit of that (I'm not that great at following recipes!) and it tasted pretty alright so thought I would write up the recipe. 

Serves 4

What you need: 

1 x large whole cauliflower chopped roughly into florets
2 x stock cubes
1 x half red onion, chopped
2 x small potatoes
1 x teaspoon of cumin
1 x teaspoon of coriander
1 x teaspoon of curry powder (more to taste if you like more spice and flavour)
Natural yoghurt (I like greek)
Drizzle of garlic oil (I get mine from Tesco)
Seasoning, lots of!

What you do:

Put the cauliflower florets and chopped red onion into a pan along with enough boiling water to cover them. Add the spices and veg stock and boil for around 15 mins until potatoes and cauliflower are soft. Blend. Serve with a teaspoon of natural yoghurt and a drizzle of garlic oil. Might need quite alot of seasoning, salt in particular! That's it! Super quick and easy, and really good for you too! Enjoy xxx ps even my kids loved it! : - )
