Hi there, Happy New Year! It's business as usual here on my site, but please note that the pandemic is still causing disruptions with Royal Mail, so you order might take longer to arrive, and apologies if you are still waiting for your parcel... in some areas they are taking up to a month to arrive. Please also note that I am not currently sending orders outside of the UK again due to postal disruptions. I hope to do so again in a few weeks. Thank you and keep safe, Lucy x

Easy & delicious paella

This paella only requires one pan (hurrah!), no measuring (hurrah!) and very little effort!

What you need:

1 pack of frozen paella (I use Tesco's)

1 pack of king prawns

2 x teaspoons of smoked paprika

a few drops of tabasco sauce (depending on how spicy you like it!)

sprinkling of white pepper

2 spring onions, chopped

handful of parsley (fresh or I often used dried)

handful of basil leaves

slice of lemon

dollop creme fraiche

garlic oil for drizzling

What you do:

Tip the paella into a pan with the king prawns. Add the smoked paprika, sprinkling of white pepper, salt to taste, chopped spring onions and a tablespoon of water. Cook over a medium heat, stirring to make sure the bottom doesn't catch. Add more water as needed. When cooked through, stir in the chopped parsley and basil. Serve up, add a drizzle of garlic oil, a dollop of creme fraiche and a squeeze of lemon. Enjoy!
