In such abundance at this time of year... and this is such a great way to stew it! Need to make sure it has the right amount of water and sugar and this is perfect. Try with greek yoghurt on granola for breakfast.
What you need:
- 500g rhubarb , cut into inch long pieces
- 1 orange , zest and juice
- 100g caster sugar
Put the rhubarb into a saucepan with the orange zest, juice, sugar and 2 tbsp water. Bring to the boil then simmer for 8 mins until the rhubarb is cooked but still holds its shape.
