This salad is so fresh and soOOOoo easy to do! Perfect in the summer as a main meal with new potatoes and parma ham, or as a starter when friends are around.
What you need:
1 x packet of mozzarella, slice it
4 x fresh figs (available from most supermarkets and farm shops), sliced
handful of pinenuts, lightly toasted in a pan over a low heat
handful of fresh basil, torn into little bits
drizzle of extra virgin olive oil
drizzle of balsamic glaze
What you do:
Arrange the mozzarella and fig slices on a dish, sprinkle over the pine nuts, basil bits and drizzle over a healthy glug of olive oil and balsamic glaze. Season to taste.
Try with parma ham, or with rocket for a peppery kick and if you like it spicy then drizzle with some chilli oil!
Serve with crusty bread or minted new potatoes.
