Now that summer is almost on it's way (here's hoping!) here is a really light, fresh and fragrant salad that not only tastes delicious but is super easy to do!
Makes a great mid week light lunch or supper, or a starter if you have friends over!
What you need:
a mango - sliced, or use chopped mango from a packet
pack of fresh mozzarella - full fat! (the half fat one just doesn't taste the same)
1/2 red chilli - deseeded and finely chopped
handful pine nuts - lightly toast them in a pan until they are just turning brown
handful fresh basil - torn into little bits
handful chives - finely chopped
drizzle of balsamic glazed
drizzle of olive oil
What you do:
Arrange the mango and mozzarella on a plate. Sprinkle the torn basil, chives, red chilli and toasted pine nuts over the top. Drizzle balsamic glaze and olive oil over it all and season. Enjoy!
Make sure you don't burn the pine kernels - they will taste very bitter!
