I've always loved gazpacho, so refreshing on a hot summers day. Also super easy to make, and really healthy too!
I love this recipe:
but the great thing about gazpacho is that you don't have to be too exact and can wing it a bit and swap in other ingredients... best served really chilled with ice cubes. It will last well in the fridge for several days, and infact tends to get better with age!
And if you fancy a blood mary, then just add vodka!
