Quick & easy quinoa salad

In the summer I live on this salad. I make a big batch and have it for a few days. Perfect for hot sunny weather! So easy to make too. Quinoa has twice the protein content of rice or barley, and is a great source of calcium, magnesium and manganese. It also possesses good levels of several B vitamins, vitamin E and dietary fibre. Not only is it super healthy but tastes fab too!

What you need: 

A pack of uncooked quinoa

A veg stock cube, I like Knorr

Dash of garlic oil

3 spring onions

Handful of chopped coriander

Frozen peas

Tub of pomegranate seeds

Feta (if you like)

Avocado

Olive oil and balsamic glaze

 

 

What you do: 

Rinse the quinoa in cold water. Add double the amount of cold water to the quinoa in the pan. Add the stock cube. Heat until boiling then simmer -- add the frozen peas when the quinoa is almost cooked.

Add a dash of garlic oil, chopped coriander and spring onions, pomegranate, chopped feta and avocado. Drizzle with olive oil and balsamic glaze and enjoy! 

Keep in the fridge and enjoy for around 3/4 days!

Tips: goes well with chicken or salmon!
