Recipe for the most amazing squidgy chocolate cake, EVER!

This really is the best chocolate cake EVER! It's sooooo delicious, plus it's really easy to make!! And it's gluten-free,  but you'd never know! I've adapted it over the years from various recipes.

What you need: 

125g of gluten-free self raising flour (I like Doves Farm, available from any supermarket)

2 Tbsp of cocoa powder

1 tsp of bicarbonate soda

150g of caster sugar

2 eggs, beaten

160ml of sunflower oil

150 ml of semi skimmed milk

2 tbsp golden syrup

For the icing: 

75g butter

175g of icing sugar

3 tbsp cocoa powder

drop of milk as required. 

 

What you do: 

Preheat oven to 180 degrees celcius, preferably non-fan as I find fans dry out cakes too much. I never bother with sieving of any of that, life's too short! Just bung all of the cake ingredients into either a Magimix and whizz up until blended and smooth, or beat together with an electric whisk. Pour into 2 lined round cake tins (around 7 inches) and bake for 25-35 mins until risen and firm to the touch. Leave to cool before putting on a cooling rack. 

For the icing: 

Beat the butter in a bowl until soft and gradually beat in the icing sugar and cocoa and enough milk to make it fluffy and spreadable. Split between the centre of the cake and the top, and enjoy! xx
