Ridiculously easy veggie & gluten-free lasagne

As a gluten-free (not by choice) vegetarian (by choice!) I really love this recipe of mine as it's comforting, hearty and ridiculously easy! My husband is a raving carnivore and he actually prefers this to normal lasagne as he says it is so much easier to digest. The kids don't even notice it's not real mince so we can enjoy it all as a family. Make a big batch and it will last for a few meals!
What you need: 
1 x Pack of soya mince (I use freshly cooked Quorn mince from Sainsbury's)
1 x jar of bolognese sauce (I like Lloyd Grossman but any will do!)
1 x pack of fresh spinach
A handful of sheets of gluten free lasagne (blanche in boiling water to soften a little)
300ml of double cream
3 tablespoons of grated cheddar (I buy packet stuff for ease!)
2 x tablespoons of grated parmesan
What you do: 
Add the jar of tomato bolognese to the soya mince and stir (no need to heat through). Add the double cream to a pan with 2 tablespoons of grated cheddar and heat through until it thickens. Season well. 
Now start layering up. Add a third of the bolognese to an ovenproof dish. Add a layer of spinach leaves. Add a third of the creamy sauce. Cover with lasagne sheets and repeat. Finish with a layer of creamy sauce and top with the rest of the grated cheddar and parmesan. 
Cook at around 180 degrees celcius for around 40 minutes, or until bubbling and golden on top. That's it! 
Serve with a green salad, drizzled with balsamic glaze and olive oil. Enjoy!
